Sounds like you need to adjust the throttle trim on your transmitter and adjust the idle screw on the carb.

I'm sure they make better/stronger ones. One of the tips I have seen is to put a small washer on them to keep them from popping off. I have had a few pop off and I just snap back on.
Be aware that if you put washer or stronger rod ends on, something else may break instead.
