what do i set my Emissivity to?

The best way to set it is to calibrate it with your home oven. If you set the oven to 275 and put your head/button in, let it sit for 15 minutes to get fully heat soak. At this point pull it out fast and temp it, set the emissivity to match the oven temp and your about as close as you can be.
On a side note, each head might read differently, black puts out alot of emissive heat where a polished aluminum would give a much lower reading even though it is actualy the same temp. I think that is how some people are convinced that a nova head will real lower temps, if you inspect one you will see that it has much less surface area as the middle is realy hollowed out. I believe they do lower the temps, but not to an extreme degree, I would only recommend them for continuous use in 100f+ heat.
