My STS 30 took exactly one gallon to break in.
Have you checked to see if the mechanical pinch is gone? To do this, you remove the glow plug. If you can rotate the engine by hand with the glow plug removed - NO resistance felt at Top Dead Center - the engine is fully broken in.
My engine seems to really come alive once it gets up to 265*F. Below that, it's kinda boggy. I am still trying to find the "Sweet Spot" as far as the tune goes, though. I am running the STS 0702 pipe. I had to make a new pipe support from a wire coat hanger (!), so this pipe is not a direct bolt on.
You will also need to fool around with your clutch adjustment & transmissions shift points. You are using aluminum clutch shoes, right?
