I'm having a hard time deciding what servo I want to use on the throttle/brake.

I bought a Hitec 7955 for the steering. I would like the throttle/brake servo to be a Hitec as well.

What torque and speed should I be looking at. Have Google and haven't come up with an answer.

For throttle you really just need to get a servo with around 125oz-175oz in of torque.
Try to find one in that range with a really good speed for good throttle response.
 
What do we all think about the Hitec HS-7975HB (Speed (4.8V/6.0V): 0.13 / 0.10
Torque oz./in. (4.8V/6.0V): 119 / 144) or HS-7965mg (Speed (4.8V/6.0V): 0.13 / 0.10
Torque oz./in. (4.8V/6.0V): 111 / 139)
 
Both of those servos you listed will work great in your application.

Thank you! I wasn't too sure as I haven't heard of them being used as throttle servos. They seem to have the specs I'm after.
