Define your estimation of 'too hot'.

Nitro engines produce smoke from the oil (lubricant) as it burns in the combustion process. So smoke is usually a good indicator that your engine is at least being lubricated.

Fuel choice - some fuels have a higher percentage of oil. Counter intuitively, this results in higher running temperatures for a given tune, due to the chemistry - oily fuel burns hotter, but the oily fuel offers better lean run protection and a broader safe tuning range.

Don't adjust your tune to attain a specific temperature.

Tune your engine to run right. It should be able to tick over for a minute or so before loading up, transition from low to mid, and mid to high.

At high speed, your exhaust should be a misty plume. Not billowing. Conversely, too little smoke indicates too lean.

Your engine should sound 'on the pipe'. Not wooly.

Once you have a useful, responsive engine that is quick to speed up and return to idle, this is where you can make a note of the operating temperature - purely for reference - for that kind of weather condition, and at that height above sea level.
