200 is really only a break in temperature. What you are seeing, 240-260, isn't out of the ordinary when you are tuning for power. Remember, temperature is mostly used as a reference. You should be tuning for good power and drivability, as well as good amount of smoke.

Well I had really good power and a good amount of smoke what concerns me is that every time I drove it through grass it'd come back in and be smoking would that be the grass burning or the engine about to blow?

First thing is you never drive a brand new :ercm: that you are breaking in on anything but smooth surfaces..... driving on grass puts way too much load on things and could damage your new :ercm:

Guessing you have it sorted out. My LRP28's run well between 240-260 all day long. During breakin, I'd heat the engine up to 200 before starting, then do what I could to keep the temp above 200F through the first 6 tanks or so. Depending on ambient temps, I'd wrap the head with a sock to hold in more heat so I didn't have to lean it too bad.
